Halloumi & Aubergine Burgers with a Spicy Onion Relish

This delicious recipe is referenced in We Who Hunt The Hollow. It’s the meal Priscilla makes after she meets Bastian for the first time… although she has to use a sugar substitute, of course.

Makes 4

Ingredients

2 ½ Tbsp olive oil
2 red onions, finely sliced
1 aubergine, cut into 8 round slices
250gm block halloumi cheese, cut into 8 slices (I get this one)
1 Tbsp (heaped) brown sugar
3-4 roasted red peppers from a jar, chopped (I like these ones the best!)
2 tsp srirarcha
4 ciabatta rolls, halved and lightly toasted
4 Tbsp hummus

Instructions

Add 1 Tbsp of the oil to a pan and tip in the onions. Cook over a high heat for a few minutes, then turn down the heat and cook for a few minutes more until soft. Tip the brown sugar, peppers and sriracha into the onions, then continue to cook until caramelised – 20+ minutes. (Once done you can set aside until needed.)

While the relish is cooking, heat another Tbsp of oil and fry the aubergine on each side until tender. I find this takes around 20 minutes total. Set aside. In the remaining oil, fry the halloumi until golden – a couple of minutes each side.

Spread the rolls with hummus, laying halloumi and aubergine slices on top. Spoon the sticky, spicy relish over top, and serve.
